~*~Dream Cookies~*~

A fun twist on classic chocolate chip cookies.

Prep time: 10 minutes
Yield: 2-3 Dozen 2" cookies

Ingredients
2 1/2 cups flour
1/2 tsp. salt
1 tsp baking soda
1 cup white sugar
1/2 cup brown sugar
2 eggs
2 tsp vanilla or almond extract
1 cup butter or shortening
1 bag chocolate chips
1 bag shaved coconut

Step 1: Prep the Batter!

Preheat the oven to 350. In a large mixing bowl, beat together the butter and sugars until creamy. Beat in the eggs. Add the baking soda, salt, and vanilla and mix thoroughly. With a wooden spoon mix in the flour until the batter is think. Fold in the chocolate chips and coconut. I usually use 1/2 a bag of both. For a sweeter option, add the entire bag of chips and roll balls of dough in the coconut flakes.

Step 2: Bake!

On an ungreased cookie sheet, drop the batter into 1" balls about 1/2" apart. Bake on the bottom oven rake for 8-10 minutes or until golden brown. Remove from oven and let cool.

Step 3: Enjoy!

~*~Luscious Lasagna~*~

A hearty Italian staple that's guaranteed to please.

Servings: 6-10
Prep Time: 30-40 minutes
Approx. Cost: $11, OR $1 per serving!

Ingredients
1 box lasagna noodles ($1)
1 tablespoon vegetable oil
1 jar pasta sauce (i prefer tomato and basil or sweet onion flavored) ($2)
1lb ground beef or sausage (for a vegetarian spin, replace the meat with 1-2 cups of chopped peppers, onions, and tomatoes) ($4)
1 large container of ricotta cheese ($2)
1 bag of shredded mozarella ($2)

Step 1: Preparing the meat OR veggies!

In a medium sized pan, heat up the vegetable oil on medium heat. Add your meat or veggies and continuously stir until fully cooked. Set aside.

Step 2: Cook the noodles!

In a large saucepan, bring water to a boil. You can add a little salt or oil to taste. Once the water is at full boil, gently drop in the lasagna noodles. If your pot isn't big enough, you can break the noodles in half. Cook the noodles until the are al dente, or still a little tough. Drain the noodles and set aside.

Step 3: Prepare the Lasagna!

Preheat the oven to 350.  Lightly grease a 13x9" pan. Line the bottom of the pan with a layer of noodles. Next, spoon on a layer of ricotta cheese, and spread it evenly. Cover the cheese with a layer of the sauce and meat/veggie. Now repeat all these layers again! Top the lasagna with one more noodle layer, and sprinkle the mozzarella cheese on top.

Step 4: Bake It!

Put the lasagna in the oven on the bottom rack. Bake for 20-30 minutes, or until the cheese on top is crispy and brown. Remove and let cool.

Step 5: Enjoy!




Leftover lasagna, if properly refrigerated, can usually last about a week. You can also freeze it and have it stay for months!
